A cross section of highly oxidised oolong tea from China’s Fujian Province. Big, brown leaves twisted lengthwise yield a brew with a characteristic roasted aroma because of the way the leaves are processed, and the scent of minerals thanks to the rocky soil in which the teas grow. In the backdrop, the sweeter notes of honey and nuts gradually unfold.
